    She Said...

    Hey Again!
    Just finished Our Biggest Loser Workout DVD. HELP ME! I was done after the warm-up! I pressed through and finished the warm-up, 20 min. cardio AND the Yoga cool down!!! (Lower Level most of the time!) I will reiterate that I am serverely OUT OF SHAPE! In the past, I could do a WHOLE jazzercise routine NO PROBLEM! I miss those days! I feel like CRAP while I'm doing these workouts and want to quit SO BAD, but there's Bob urging, encouraging, and demanding I keep going! It does help! (Plus bragging on here that I DID IT!) Wink  I WILL GET MY FITNESS LEVEL UP!!!!! I will.  I have my fitness assessment tomorrow and I'm sure that will be just lovely.....maybe if I just go in and admit I suck, they'll go easy on me....probably not! Sad  Anyway, we had some GREAT chicken last night with the Zucchini Sticks as a side dish.  The sauce was really really good!  Recipe anyone?...
     

    Chicken Breasts with Terragon Cream Sauce

    4 Chicken Breast halves (boneless, skinless)

    Salt & Pepper

    1 TB Butter

    1TB Olive Oil

    Sauce:

    ½ c. Cream (fat free)

    1TB Dijon Mustard

    2 ts. Tarragon

     

    Sprinkle chicken with salt & pepper.

    In a large skillet over medium heat, melt butter with oil.

    Brown chicken on both sides.

    Reduce heat and cook, covered, 15 min. (or until done).

    Transfer chicken to serving platter and tent with foil to keep warm.

    Add cream to skillet, scraping up brown bits.

    Stir in mustard and tarragon.

    Cook over medium heat, stirring constantly, 5 minutes until sauce thickens slightly.

    Pour over chicken and ENJOY!

     

    It really is great, Marcus LOVES it! We have it at least once a week.

    Also, started eating WeightSmart Banana Nut Oatmeal.  It's really good!  I use 1/4c. fat free half&half cream & 1/2c. water and make it in the microwave for 1 min.  Any other breakfast tips are greatly appreciated. (Trying to keep eating in the mornings....it's been a struggle - not a morning eater!)  Thanks Everyone and Keep Up The Great Work!

    IT'S ALL YOUR FAULT!!!   Your interview and your blog about the Biggest Loser Workout - I had to try it!  AND I DID IT! Thanks for the inspiration! - I wrote about it on my blog.
    Oh - the guy is winning the weight loss in our house this week....wonder if I should sneak him something!

    Just a few minutes ago I was thinking to myself "Hmm, I wonder what I'll make for dinner tonight?"  and there you are with a yummy sounding recipe.  I think we have all that stuff in our kitchen already so I'll probably make that.  Thanks!

    Are you a fruit person?  I heard once that eating an apple wakes you up even more so than a cup of coffee.  (I don't remember the why of it though....)  Of course, if you're doing South Beach that's probably too much sugar.  Dannon has a carb-smart yogurt:  Light&Fit Carb & Sugar Control.  They have like 3 or 4g carbs.  That might be an option for when even 1 minute seems like too much cooking. I've had mornings like that before, ha ha.
